Take a portion of mashed potatoes in your hands and flatten it into a disk.
Place a spoonful of stuffing in the center of the disk and add a little grated cheese.
Fold the edges to form a patty, making sure to seal the filling inside.
Repeat until all the ingredients are used up.
Cooking:
Heat oil in a skillet over medium heat.
Cook the stuffed potato pancakes until golden brown and crispy on both sides.
Service:
Serve hot with a green salad or yogurt sauce.
