Fried Potatoes, Onions, and Smoked Sausage

Ingredients:

4 large potatoes, peeled and sliced

1 large onion, sliced

1 lb smoked sausage, sliced

3 tablespoons vegetable oil

Salt and pepper to taste

Instructions:

Heat vegetable oil in a large skillet over medium heat.

Add the sliced potatoes and onions to the skillet. Cook, stirring occasionally, until potatoes are tender and golden brown, about 15-20 minutes.

Add the sliced smoked sausage to the skillet. Continue cooking for an additional 10 minutes, or until the sausage is heated through and slightly browned.

Season with salt and pepper to taste. Serve hot.
