Fried squid: the method to make them crispy on the outside and soft on the inside

Ingredients:

1 kg of squid
1 teaspoon of baking soda
Mineral water with the juice of half a lemon or two glasses of soda
Flour
300 g of water
300 g of white vinegar
Peanut oil for frying

Preparation:

1. After washing them well, cut the squid into slices and place them in a bowl.
2. Add baking soda and water/soda.
3. Leave them to soak for 15/30 minutes.
4. Rinse them under running water, then coat them with flour.
5. Before frying, rinse them in a solution of equal parts water and vinegar.
6. Fry in boiling oil for 1/2 minute, drain well from the oil and season with salt
