Zucchini and Potato Fritters with Cheese

Ingredients

1 zucchini
1 carrot
2 potatoes

100 grams (3.5 oz) cheese, grated
3 eggs

4 tablespoons semolina
Salt to taste
Black pepper to taste

Directions

Prepare Vegetables:
Grate 1 zucchini, 1 carrot, and 2 potatoes. Place them in a bowl.
Sprinkle with salt and let sit for a few minutes to draw out excess moisture. Squeeze out the liquid from the grated vegetables.

Mix Ingredients:
In a large mixing bowl, combine the grated zucchini, carrot, potatoes, and chopped spring onion.
Add 100 grams grated cheese, 3 eggs, 4 tablespoons semolina, salt, and black pepper. Mix well until all ingredients are evenly combined.

Heat a non-stick skillet over medium heat and add a little oil.
Take small portions of the mixture and shape them into patties.
