Beef Barley Soup
Here are the ingredients:
– 2 stalks of chopped celery
– 1 pound of cubed beef stew meat
– 1 can of 14.5 ounces diced tomatoes with juice
Ingredients:
– 1 tablespoon of olive oil – 3 chopped garlic cloves
6 cups of beef broth
2 chopped carrots
Season with salt and pepper as desired. Add
1 teaspoon of dried thyme.
One cup of pearl barley
—two bay leaves
For the garnish, cut one onion and some fresh parsley.
Instructions:
1. In a big saucepan, heat the olive oil over medium heat. When the pan is heated, add the beef stew cubes and cook, turning regularly, for four to five minutes, or until the beef is browned on both sides. The meat should be taken out of the saucepan and placed aside.
