Baked zucchini fritters  are a delicious and tasty recipe, a  lighter variation  of the classic fried zucchini fritters. Ideal during the summer season, they can be served as a starter or as a vegetarian main course: crunchy on the outside and soft in the middle, they will delight everyone at the table, adults and children alike.

They are prepared in a short time and with  simple ingredients  that we all have at home: zucchini, breadcrumbs, eggs, grated cheese and rosemary, for an aromatic and fragrant note. Making them is very simple: just grate the zucchini with a large-hole grater, mix the other ingredients and knead everything until you get a  compact  , soft and malleable mixture, so as to form the pancakes.

If it is too soft, you can add more  breadcrumbs  ; otherwise, drizzle with extra virgin olive oil to soften the mixture. After forming many balls, these should be flattened with your hands, placed on a baking tray covered with baking paper, drizzled with a little oil and then baked in the oven at 180°C for 15-20 minutes, until they become  golden brown  and fragrant.

Once ready, serve them hot with a sauce of your choice, such as a delicate mayonnaise, a yogurt cream or a fresh avocado guacamole. Alternatively, you can cook them in a pan or deep fryer and add the  aromatic herbs  and spices you prefer, such as mint, basil, thyme or cumin.
