Instructions:

1. Create the Banana Pudding: In a saucepan, whisk together sugar, egg yolks, and flour. Gradually whisk in milk. Cook over medium heat, stirring frequently, until the mixture thickens and just begins to boil. Remove from heat, stir in vanilla extract, and allow the pudding to cool completely.

2. Prepare the Coffee Mixture: In a shallow dish, mix the cooled coffee with rum or coffee liqueur, if using. Set aside.

3. Assemble the Tiramisu: Dip each ladyfinger quickly into the coffee mixture, soaking both sides. Arrange a layer of soaked ladyfingers at the bottom of a 9×9-inch dish.

4. Layer with Pudding and Bananas: Spread half of the cooled banana pudding over the ladyfingers. Add a layer of sliced bananas on top.

5. Prepare the Mascarpone Layer: Beat the mascarpone cheese in a large bowl until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the mascarpone. Spread half of this mascarpone mixture over the bananas.

6. Repeat the Layers: Add another layer of soaked ladyfingers, followed by the remaining banana pudding, bananas, and mascarpone mixture.

7. Chill & Serve: Cover the tiramisu and refrigerate for at least 4 hours, or preferably overnight. Before serving, dust the top with cocoa powder and garnish with additional banana slices if desired.
