Step 1 First boil the apples and, once drained, mash them well. Let them cool.

2: Pour the flour into a large bowl

Add the brewed durum wheat semolina
Step 4:
Add the dry brewer’s yeast; if you are using fresh, you can crumble it.

Stir to mix the flours with the baking powder

Start pouring in hot water, about half the size

Stir roughly with a spoon
Step 8:
Add the mashed potatoes and stir.

Drain the remaining water
Step 10
: Pour in the extra virgin olive oil

: Add the salt
Step 12
Knead with your hands
Step 13
Transfer the dough to the floured work surface

Knead vigorously with your hands
Step 15
Roll out the dough
