Prepare the potatoes:
Peel the potatoes and cut them into small pieces.
Place the cut potatoes on a piece of plastic wrap and microwave for about 7 minutes at 700W. Make sure they are fully cooked.
Mash the potatoes finely.
Make the dough:
Mix the mashed potatoes with the potato starch. Gradually add water a little at a time to get the right consistency. The dough should be soft but not cracked.
Put the dough down and use a bottle to press down and create a mushroom shape.
Cook the potato mushrooms:
Bring a pot of water to a boil and add the potatoes.
Boil for about 2 minutes and 30 seconds, or until they start to float, indicating they are done.
Drain and rinse them with cold water, then drain again.
Make the seasoning:
In a small bowl, combine the minced garlic, soy sauce, sugar, chili powder and chopped green onion. Heat the avocado oil until boiling, then pour it over the seasoning mixture.
