Bottom Round Roast: The Easy Recipe for Ultra-Flavorful Roast Beef

Blot roast dry with paper towels, then place in a baking dish.
Mix butter, rosemary and garlic in a small bowl.
Spread garlic-herb butter over roast. Season roast lightly with black pepper. Place roast in oven and reduce heat to 480°F.
Cook for 7 minutes per pound of meat. Turn oven off and leave roast in oven for 1 hour. After an hour, heat the oven to 38°C and cook for another hour or so, or until the roast has reached your preferred doneness.
Notes
Store leftovers in an airtight container or wrap in foil and refrigerate for up to 4 days. Great in sandwiches!
