Carrot salad with yogurt.

– Peel the carrots and grate them coarsely or cut them into thin slices using a grater or peeler.
– Wash the green apple, remove its core and cut it into fine julienne or small cubes. You can leave the skin if you prefer more texture and color.
– In a bowl, mix the natural yogurt with the juice of half a lemon.
– Optionally, add a teaspoon of honey for a slightly sweet touch.
– Add a little extra virgin olive oil and mix well until all the ingredients are combined.
– Add the grated carrots and chopped green apple to the bowl with the yogurt dressing.
– Mix well to ensure that all the carrots and apples are coated with the dressing.
– Taste and adjust the seasoning with salt and pepper to taste.
– Serve the salad in individual bowls or in a large bowl as an accompaniment.
– Optionally, garnish with chopped walnuts or almonds and a little fresh chopped parsley for a crunchy and fresh touch.
