Coconut Cream Pie
Ingredients:
For the crust:
1 1/2 cups almond flour
1/4 cup butter, melted
1/4 cup powdered sweetener of choice
1/4 teaspoon salt

For the filling:
1/4 cup unsweetened shredded coconut
1 cup heavy cream
1/2 cup powdered sweetener of choice
3 large eggs
1 teaspoon of vanilla extract
1/4 teaspoon xanthan gum
Extra unsweetened shredded coconut, toasted (for garnish, optional)

Methods:
Preheat your oven to 350°F (175°C).
