Coconut Lime Bars

Instructions:

Step 1: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: In a mixing bowl, combine flour, shredded coconut, granulated sugar, and melted butter for the crust. Mix until well combined.
Step 3: Press mixture evenly into the bottom of the prepared baking dish to form the crust.
Step 4: Bake crust in the preheated oven for 15 to 18 minutes, or until lightly browned around the edges. Remove from oven and let cool slightly.
Step 5: While crust cools, prepare the lime filling. In a separate bowl, whisk together eggs, granulated sugar, lime zest, lime juice, flour, and baking powder until smooth.
Step 6: Pour lime filling over partially cooled crust, spreading evenly.
Step 7: Return the baking dish to the oven and bake for an additional 20 to 25 minutes, or until the filling is set and the edges are lightly browned.
Step 8: Remove from the oven and allow the Coconut Lime Bars to cool completely in the baking dish.
Step 9: Once cooled, refrigerate the bars for at least 1 hour to chill and set.
Step 10: Before serving, dust the tops of the bars with powdered sugar and garnish with shredded coconut, if desired.
Step 11: Cut into squares and serve these delicious Coconut Lime Bars as a refreshing dessert or snack.
