Crispy Spinach and Cheese Filled Dough

 

In a large bowl, combine 8 cups of all-purpose flour (875 g) and 1 teaspoon of salt (5 g).
Add 55 g of butter and mix it into the flour until the mixture is crumbly.

Gradually add 2.5 cups of warm water (500 ml), mixing until a dough forms.
Knead the dough until smooth and elastic.
Cover the dough and let it rest for 30 minutes.
Prepare the Stuffing:
Finely chop 200 g of spinach.
In a bowl, mix the spinach with 1 teaspoon of salt (5 g) and 1 teaspoon of black pepper (4 g).
Add 100 g of grated cheddar cheese or mozzarella and mix well.
Assemble the Filled Dough:
Divide the dough into equal portions and roll each portion into a ball.
On a floured surface, roll out each dough ball into a thin circle.
Place a spoonful of the spinach and cheese mixture onto one half of the dough circle.
Fold the other half of the dough over the filling and press the edges to seal.
Fry the Filled Dough:
Heat oil in a frying pan over medium heat.
Fry each filled dough until golden brown on both sides.
Remove from the pan and drain on paper towels.
Serve:
Serve the crispy spinach and cheese filled dough warm, as an appetizer or snack.
