Delicious pineapple pavé

Reserve 3 slices of pineapple to decorate the pavé, chop the rest of the pineapple into small pieces and set aside. In a thick-bottomed pan add the milk, condensed milk, egg yolks, starch and coconut, mix well. Cook over low heat, always stirring with a wooden spoon until it thickens and takes on consistency.
Take a glass dish to assemble the pavé, put the guaraná in a bowl to wet the cookies, on the dish place a layer of cookies wet in the guaraná and one of the cream
Repeat the process until finishing with the cream last. Sprinkle the chopped pineapple on top and set aside. Using a mixer, beat the egg whites, then with the mixer still running, add the sugar and beat until combined.
Remove from the mixer and add the cream, stirring gently until well combined.
Pour the cream over the pineapple, sprinkle the grated coconut on top, refrigerate for 6 hours or overnight. Once chilled, garnish with the reserved pineapple slices and the cherry, cut 2 slices in half, then place each slice in a corner of the dish, inside the slice place a cherry. Place a whole slice in the center of the pavé and a cherry inside, then serve
