My nana cook’s this yellow vegetable soup and eats it daily. Here’s why (and how to make it)

– 2 large carrots, chopped
– 1 yellow bell pepper, diced
– 1 small onion, finely chopped
– 2 garlic cloves, minced
– 1 teaspoon turmeric powder
– 4 cups vegetable broth
– 1 cup coconut milk
– Salt and pepper to taste
– Fresh parsley for garnish
2. Instructions:
– In a large pot, sauté the onions and garlic until they become translucent.
– Add the chopped carrots and bell pepper, cooking for about 5 minutes.
– Stir in the turmeric powder and cook for another minute.
– Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes.
– Once the vegetables are tender, blend the soup using an immersion blender until smooth.
– Stir in the coconut milk, salt, and pepper. Let it simmer for another 5 minutes.
