1.Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2.In a medium mixing bowl, whisk together the all-purpose flour, instant pistachio pudding mix, baking powder, baking soda, and salt. Set this dry mixture aside.
3.In a separate large mixing bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar until it’s light and fluffy.
4.Beat in the eggs and almond extract (if using) until well combined.
5.Gradually add the dry mixture to the wet ingredients, mixing until just combined.
6.Stir in the milk to create a smooth batter.
7.Gently fold in the chopped pistachios. These will add texture and flavor to your bread.
8.Pour the pistachio bread batter into the prepared loaf pan and spread it evenly.
9.Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean. The exact baking time may vary, so start checking at around 50 minutes.Allow the pistachio bread to cool in the pan for about 10-15 minutes, then remove it from the pan and place it on a wire rack to cool completely.
10.Once completely cooled,garnish with jelly and pistachio
