Quick and Delicious Zucchini Dinner

Heat the Oil: Heat 20 ml of olive oil in a large pan over medium heat.
Cook the Vegetables: Add the chopped vegetables (zucchini, bell pepper, carrot, chives, celery, tomato, and eggplant) to the pan. Season with salt, pepper, and dill to taste. Stir-fry the vegetables for about 5-7 minutes until they are tender but still slightly crisp.
Prepare the Egg Mixture:

Beat the Eggs: In a separate bowl, beat the 2 eggs with 70 ml of milk until well combined. Season with a pinch of salt and pepper.
Combine and Cook:

Add the Egg Mixture: Pour the beaten egg mixture evenly over the cooked vegetables in the pan. Allow the eggs to set slightly at the bottom.
Add Cheese: Sprinkle grated mozzarella cheese evenly over the top of the egg and vegetable mixture.
Cook Covered: Cover the pan with a lid and let it cook for another 3-4 minutes or until the cheese is melted and bubbly.
Serve:

Serve Hot: Once the cheese is melted and the eggs are cooked through, remove the pan from heat. Serve the zucchini dinner hot, garnished with extra fresh herbs if desired.
