β 2 cups grated zucchini
β 1 3/4 cups flour

β 1/2 tsp salt
β 1 cup sugar
β 1/2 cup brown sugar
β 2 eggs
β 1/2 cup buttermilk
β 1/2 cup vegetable oil
β 1 tsp vanilla extract

β 8 oz cream cheese, softened
β 1/2 cup butter, softened
β 3 cups confectionersβ sugar
β 1 tsp vanilla extract

Zucchini Cake with Cream Cheese Frosting
1οΈβ£ Preheat oven to 350Β°F (175Β°C). Grease and flour a 9Γ13 inch pan.
2οΈβ£ In a large bowl, combine zucchini, flour, baking powder, baking soda, and salt.
3οΈβ£ In a separate bowl, whisk together sugar, brown sugar, eggs, buttermilk, vegetable oil, and vanilla.
4οΈβ£ Add wet ingredients to dry ingredients and mix until just combined.
5οΈβ£ Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
6οΈβ£ Let cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
7οΈβ£ For the frosting, beat cream cheese and butter together until smooth.
